Instructions

  1. Season the pork
    • Rub pork loin with salt, pepper, garlic powder, paprika, and thyme/rosemary.
  2. Sear (optional but recommended)
    • Heat olive oil in a skillet over medium-high heat.
    • Sear pork on all sides until golden brown (2–3 minutes per side).
  3. Prepare slow cooker
    • Place onions, garlic, and optional vegetables in the bottom of the slow cooker.
    • Add seared pork on top. Pour broth (and soy sauce, if using) around it.
  4. Cook
    • Cover and cook low for 6–8 hours or high for 3–4 hours, until pork reaches an internal temp of 145°F (63°C) and is tender.
  5. Rest & slice
    • Remove pork and let rest 10 minutes before slicing.
    • Serve with vegetables and pan juices.
