Pork Barbecue (Grilled or Oven)

Ingredients (4–6 servings)

  • 2–3 lbs pork shoulder or pork butt, cut into large chunks or left whole
  • 1 cup barbecue sauce (store-bought or homemade)
  • ¼ cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • Optional: salt to taste

Instructions

Oven Method:

  1. Preheat oven to 300°F (150°C).
  2. Prepare pork
    • Rub pork with smoked paprika, garlic powder, onion powder, black pepper, and a pinch of salt.
    • Place in a roasting pan.
  3. Add liquid
    • Mix barbecue sauce, apple cider vinegar, and brown sugar.
    • Pour over pork, covering well.
  4. Roast low and slow
    • Cover with foil and roast 3–4 hours, until pork is tender and easily shredded.
  5. Optional finishing
    • Remove foil, brush with extra barbecue sauce, and broil or grill 5–10 minutes for caramelized edges.
  6. Serve
    • Shred pork with forks, serve on buns, with coleslaw, or with extra barbecue sauce.

Grill Method:

  1. Preheat grill to medium-low heat.
  2. Season pork as above.
  3. Grill indirectly for 2–3 hours, turning occasionally, until tender.
  4. Brush with barbecue sauce during the last 30 minutes for caramelization.

Tips & Variations

  • Spicy barbecue: add cayenne or hot sauce to the sauce
  • Sweet & tangy: mix pineapple juice or honey into the sauce
  • Slow cooker option: cook pork with sauce on low 6–8 hours, then shred
