Here’s a classic, ultra-moist Oatmeal Cake—old-fashioned, cozy, and perfect with coffee ☕🍰


Old-Fashioned Oatmeal Cake

Ingredients

Cake

  • 1 cup old-fashioned rolled oats
  • 1¼ cups boiling water
  • ½ cup butter, softened
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • ½ tsp salt

Broiled Coconut-Pecan Topping (optional but classic)

  • ½ cup brown sugar
  • ¼ cup butter, melted
  • ¼ cup milk or cream
  • ¾ cup shredded coconut
  • ½ cup chopped pecans or walnuts

Instructions

  1. Soak the oats
    Pour boiling water over oats in a bowl. Let stand 15–20 minutes until softened.
  2. Preheat oven
    350°F (175°C). Grease an 8×8-inch pan.
  3. Mix batter
    Cream butter and sugars until fluffy.
    Beat in eggs and vanilla.
    Stir in soaked oats.
  4. Add dry ingredients
    Whisk flour, baking soda, cinnamon, nutmeg, and salt.
    Add to batter and mix just until combined.
  5. Bake
    Pour into pan and bake 35–40 minutes, until a toothpick comes out clean.
  6. Add topping (optional)
    Mix topping ingredients.
    Spread over hot cake.
    Broil 1–2 minutes until bubbly and lightly golden (watch closely!).
  7. Cool & serve
    Let cool slightly before slicing.

  • Add ½ cup raisins or chopped dates
  • Swap cinnamon for pumpkin spice
  • Serve warm with vanilla ice cream
  • Make it dairy-free with oil + plant milk
