Chicken Parmesan Grilled Cheese

Ingredients (makes 2 sandwiches)

  • 4 slices thick-cut bread (Italian, sourdough, or Texas toast)
  • 1 cup cooked chicken (breaded chicken cutlet, tenders, or rotisserie)
  • ½–¾ cup marinara sauce
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tbsp butter (softened)
  • Optional: sliced provolone or fresh basil

Instructions

  1. Prepare the chicken
    • If using breaded chicken, warm it and slice into thin strips.
    • Toss lightly with marinara so it’s saucy but not soggy.
  2. Assemble the sandwiches
    • Butter one side of each bread slice.
    • Place bread butter-side down.
    • Layer mozzarella, chicken, marinara, Parmesan, then more mozzarella.
    • Top with remaining bread (butter-side up).
  3. Grill
    • Heat skillet over medium-low.
    • Cook sandwiches 3–4 minutes per side, pressing gently, until bread is golden and cheese is melted.
  4. Serve
    • Let rest 1 minute, then slice.
    • Serve with extra marinara for dipping.

Tips & Variations

  • Extra crispy: Add a light sprinkle of Parmesan on the outside of buttered bread before grilling
  • Spicy: Add crushed red pepper or Calabrian chili paste
  • Garlic bread style: Mix garlic powder or garlic butter into the butter
  • Air fryer: 375°F (190°C) for 5–7 minutes, flipping once
