Easy Beef Stew
Ingredients
- 1 lb beef stew meat
- 2 tablespoons oil
- 1 small onion (chopped)
- 2 carrots (sliced)
- 2 potatoes (cubed)
- 3 cups beef broth
- Salt & pepper
- Optional: garlic, bay leaf, thyme
Steps
- Heat oil in a pot and brown the beef on all sides.
- Add onion (and garlic) and cook until soft.
- Add broth, carrots, potatoes, and seasonings.
- Bring to a boil, then lower to a simmer.
- Cover and cook 60–90 minutes, stirring occasionally, until beef is tender.
- Taste and adjust seasoning.
Tips
- For thicker stew, mash a few potatoes or add a small flour slurry.
- Tastes even better the next day.
- Serve with bread or biscuits.
