Here’s a classic croquette recipe—crispy outside, creamy inside 🤎
(You can adapt this to chicken, potato, ham, fish, or vegetables.)


🟤 Classic Potato Croquettes (about 12)

Ingredients

  • 2 cups mashed potatoes (cold works best)
  • ½ cup finely chopped cooked chicken, ham, or cheese (optional)
  • 1 egg yolk
  • 2 tbsp butter
  • Salt & pepper
  • Pinch of nutmeg (optional)

Breading

  • Flour
  • 1 egg, beaten
  • Breadcrumbs (panko for extra crunch)

For frying

  • Neutral oil

Instructions

  1. Make filling:
    Mix mashed potatoes, butter, egg yolk, seasoning, and any add-ins until smooth.
  2. Chill mixture 20–30 min (helps shaping).
  3. Shape into logs or balls.
  4. Roll in flour → egg → breadcrumbs.
  5. Chill again 10 min for best results.
  6. Fry at 350°F / 175°C for 2–3 min until golden.
  7. Drain on paper towels.

🔥 Variations

  • Chicken croquettes: Add shredded chicken + parsley.
  • Spanish-style: Ham + nutmeg + béchamel instead of potatoes.
  • Fish croquettes: Flaked cod or tuna + lemon zest.
  • Cheese-only: Mozzarella or Gruyère center.

🥄 Sauces

  • Garlic aioli
  • Mustard sauce
  • Tomato ketchup
  • Spicy mayo

⚠️ Pro Tips

  • Filling must be cold before frying.
  • Oil too hot = burst croquettes.
  • Double-bread for extra crunch.
