🍌 Caramelized Banana Cake (8–10 servings)

Ingredients

For the caramelized bananas:

  • 2–3 ripe bananas, sliced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp cinnamon (optional)

For the cake:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk or buttermilk
  • 1 cup mashed ripe banana (about 2–3 bananas)

Instructions

  1. Caramelize bananas:
    • Heat butter in a skillet over medium heat.
    • Add sliced bananas and brown sugar. Cook 2–3 min until caramelized. Set aside to cool slightly.
  2. Prepare cake batter:
    • Preheat oven to 350°F (175°C). Grease a 9-inch round or square pan.
    • In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
    • In another bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, then vanilla.
    • Mix in mashed bananas and milk. Gradually fold in dry ingredients until combined.
  3. Assemble and bake:
    • Pour half the batter into the prepared pan.
    • Spoon half of the caramelized bananas over the batter.
    • Pour remaining batter on top, then top with the rest of the bananas.
    • Bake 45–55 min, or until a toothpick inserted comes out clean.
  4. Cool & serve:
    • Let cool in the pan 10–15 min before slicing. Serve warm or at room temperature. Optional: drizzle with caramel sauce or sprinkle powdered sugar.

🔄 Variations

  • Nutty: Add ½ cup chopped walnuts or pecans to the batter.
  • Chocolate: Mix in ½ cup chocolate chips.
  • Gluten-free: Substitute with 1:1 gluten-free flour blend.
  • Extra moist: Replace milk with yogurt or sour cream.

  • Use ripe bananas (more brown spots = sweeter flavor).
  • Caramelizing bananas before baking adds a rich, deep flavor.
