🥔 Potatoes & Onions Skillet (Serves 4)

Ingredients

  • 4 medium potatoes, peeled or unpeeled, diced or sliced
  • 1 large onion, sliced
  • 2–3 tbsp olive oil or butter
  • Salt & black pepper to taste
  • 1 tsp paprika (optional)
  • 1–2 tsp fresh herbs like parsley, thyme, or rosemary (optional)

Instructions

  1. Prep potatoes
    • Dice or slice potatoes evenly so they cook at the same rate.
    • Optional: rinse diced potatoes and pat dry for extra crispiness.
  2. Cook potatoes
    • Heat olive oil or butter in a large skillet over medium heat.
    • Add potatoes, season with salt, pepper, and paprika.
    • Cook 10–15 minutes, stirring occasionally, until potatoes start to brown.
  3. Add onions
    • Add sliced onions to the skillet.
    • Cook another 10 minutes until potatoes are tender and golden, onions are soft and caramelized.
  4. Finish & serve
    • Sprinkle with fresh herbs if desired.
    • Serve hot as a side with eggs, roast meat, or sausages.

🔄 Variations

  • Garlic version: Add 2–3 minced garlic cloves in the last 2 minutes of cooking.
  • Crispier version: Parboil potatoes 5 minutes before frying.
  • Cheesy: Sprinkle grated cheese over the potatoes and onions just before serving.
  • Spicy: Add a pinch of cayenne or smoked paprika for heat.

  • Use medium-starch potatoes like Yukon Gold for a balance of crisp and creamy.
