🥧 Shepherd’s Pie (Serves 4–6)

Ingredients

Filling

  • 1 lb ground lamb (or beef if you prefer “Cottage Pie”)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 cup beef or chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt & pepper to taste
  • 2 tbsp olive oil

Mashed Potato Topping

  • 2 lbs potatoes, peeled and diced
  • 4 tbsp butter
  • ½ cup milk (more if needed)
  • Salt & pepper to taste
  • Optional: ¼ cup shredded cheddar cheese

Instructions

1️⃣ Make the mashed potatoes

  1. Boil potatoes in salted water until tender, ~15–20 min.
  2. Drain and mash with butter, milk, salt, and pepper.
  3. Optional: fold in shredded cheddar for extra flavor.

2️⃣ Cook the filling

  1. Heat oil in a skillet over medium heat.
  2. Sauté onion, garlic, and carrots 5 min until softened.
  3. Add ground lamb, cook until browned. Drain excess fat if needed.
  4. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Pour in broth, simmer 5–10 min until slightly thickened.
  6. Stir in peas just before assembling.

3️⃣ Assemble the pie

  1. Preheat oven to 375°F (190°C).
  2. Spread meat mixture in a baking dish.
  3. Top evenly with mashed potatoes.
  4. Optional: use a fork to create texture on top for browning.

4️⃣ Bake

  • Bake 25–30 min, until the top is lightly golden and edges bubbling.
  • Optional: broil 2–3 min for extra golden top.

5️⃣ Serve

  • Let cool 5 minutes, then serve hot.

  • Cheesy Shepherd’s Pie: Mix shredded cheese into the potato topping.
  • Vegetarian: Use lentils, mushrooms, and root vegetables instead of meat.
  • Make-ahead: Assemble and refrigerate; bake 35–40 min until heated through.
  • Individual pies: Use ramekins for personal servings.
