🍰 New York Cheesecake (9-inch, Serves 8–10)

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

Filling

  • 4 (8-oz) packages cream cheese, softened
  • 1¼ cups granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Instructions

1️⃣ Prepare crust

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter.
  3. Press mixture into the bottom of a 9-inch springform pan (slightly up the sides).
  4. Bake 10 minutes, then cool while preparing filling.

2️⃣ Make filling

  1. Beat cream cheese until smooth and creamy (no lumps).
  2. Gradually add sugar and vanilla.
  3. Add eggs one at a time, beating gently.
  4. Mix in sour cream and heavy cream until fully combined.

3️⃣ Assemble & bake

  1. Pour filling over crust in springform pan.
  2. Place pan in a water bath: wrap bottom in foil and set in larger pan with hot water about halfway up the sides.
  3. Bake 60–70 minutes until edges are set but center slightly jiggly.

4️⃣ Cool

  1. Turn off oven and leave cheesecake inside with door ajar 1 hour.
  2. Remove, cool completely on wire rack, then refrigerate at least 4 hours or overnight.

5️⃣ Serve

  • Release from springform pan.
  • Optional toppings: fresh berries, fruit compote, chocolate drizzle, or whipped cream.

  • Chocolate swirl: Melt ½ cup chocolate, drop over filling, swirl with knife before baking.
  • Fruit topping: Fresh strawberries, blueberries, or cherry pie filling.
  • Mini cheesecakes: Bake in muffin tins for personal servings.
  • Lower sugar: Reduce sugar to ¾ cup; cheesecake will still be rich.
