Carrot and cucumber salad

Here’s a simple and refreshing carrot and cucumber salad recipe that’s crunchy, tangy, and easy to make:


Ingredients:

  • 2 medium carrots, peeled and grated or julienned
  • 1 large cucumber, sliced thin or julienned
  • 2–3 tbsp olive oil
  • 1–2 tbsp lemon juice or vinegar (white or apple cider)
  • 1 tsp honey or sugar (optional, for slight sweetness)
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (like parsley, dill, or mint)
  • Optional: thinly sliced red onion or radish for extra flavor

Instructions:

  1. In a large bowl, combine the grated carrots and sliced cucumber.
  2. In a small bowl, whisk together olive oil, lemon juice or vinegar, honey (if using), salt, and pepper.
  3. Pour the dressing over the vegetables and toss until evenly coated.
  4. Let it sit for 10–15 minutes to allow flavors to meld.
  5. Garnish with fresh herbs if desired and serve chilled.
