Creamy Gnocchi Soup
Ingredients
- 1 tbsp butter or olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 cups cooked chicken, shredded (optional)
- 4 cups chicken or vegetable broth
- 1 cup milk or light cream
- 1 package (16 oz / ~500 g) potato gnocchi
- 1–2 cups spinach or kale
- Salt and pepper to taste
- Optional: Italian seasoning or thyme
Steps
- Sauté veggies:
In a pot, heat butter/oil. Cook onion and carrots until soft. Add garlic and cook 30 seconds. - Add broth:
Pour in broth and bring to a gentle boil. - Cook gnocchi:
Add gnocchi and cook 2–3 minutes (they’ll float when done). - Make it creamy:
Stir in milk/cream and chicken (if using). Lower heat. - Add greens:
Add spinach or kale and cook just until wilted. - Season & serve:
