Gnocchi soup

Yum 😋 Gnocchi soup is cozy and filling. Here’s an easy, creamy version (like a chicken gnocchi soup), but you can skip the chicken if you want it vegetarian.

Creamy Gnocchi Soup

Ingredients

  • 1 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 cups cooked chicken, shredded (optional)
  • 4 cups chicken or vegetable broth
  • 1 cup milk or light cream
  • 1 package (16 oz / ~500 g) potato gnocchi
  • 1–2 cups spinach or kale
  • Salt and pepper to taste
  • Optional: Italian seasoning or thyme

Steps

  1. Sauté veggies:
    In a pot, heat butter/oil. Cook onion and carrots until soft. Add garlic and cook 30 seconds.
  2. Add broth:
    Pour in broth and bring to a gentle boil.
  3. Cook gnocchi:
    Add gnocchi and cook 2–3 minutes (they’ll float when done).
  4. Make it creamy:
    Stir in milk/cream and chicken (if using). Lower heat.
  5. Add greens:
    Add spinach or kale and cook just until wilted.
  6. Season & serve:
    Add salt, pepper, and herbs. Serve warm 🍲

Tips

  • Thicker soup: stir in 1 tsp cornstarch mixed with cold water
  • Extra flavor: add grated Parmesan on top
  • Dairy-free: use olive oil + coconut milk or oat milk
