Cabbage Roll Soup

Ingredients

  • 1 tbsp olive oil
  • 1 lb (about 500 g) ground beef or turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 1 can (14–15 oz) diced tomatoes
  • 1 small can tomato sauce
  • 4–5 cups beef or vegetable broth
  • ½ cup uncooked rice
  • 1 tsp paprika
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: pinch of sugar (balances the tomato flavor)

Steps

  1. Brown the meat:
    Heat oil in a large pot. Cook ground meat with onion until browned. Add garlic and cook 30 seconds.
  2. Add soup base:
    Stir in tomatoes, tomato sauce, broth, and seasonings.
  3. Add cabbage & rice:
    Add chopped cabbage and uncooked rice. Stir well.
  4. Simmer:
    Bring to a gentle boil, then reduce heat and simmer 25–30 minutes, until rice is tender.
  5. Taste & serve:
    Adjust seasoning and serve hot 🍲

Tips

  • Faster version: use cooked rice and simmer only 15 minutes
  • Vegetarian: skip meat, add beans or lentils
  • Thicker soup: add extra cabbage or reduce broth slightly
