Pancakes 🥞—fluffy, golden, and super easy. Here’s a classic homemade pancake recipe you can make anytime.


Easy Fluffy Pancakes

Ingredients

  • 1½ cups all-purpose flour
  • 3½ tsp baking powder
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1¼ cups milk
  • 1 egg
  • 3 tbsp melted butter or oil
  • 1 tsp vanilla (optional)

Instructions

  1. Mix dry ingredients
    • In a bowl, whisk flour, baking powder, sugar, and salt.
  2. Mix wet ingredients
    • In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine
    • Pour wet ingredients into dry.
    • Stir just until combined (a few lumps are fine).
  4. Cook
    • Heat a lightly greased skillet or griddle over medium heat.
    • Pour ¼ cup batter per pancake.
    • Cook until bubbles form (2–3 minutes).
    • Flip and cook 1–2 minutes more until golden.
  5. Serve
    • Butter, syrup, fruit, or chocolate chips on top.

Tips for Fluffy Pancakes

  • Don’t overmix—lumps = fluff.
  • Let batter rest 5 minutes before cooking.
  • Flip only once.

Quick Variations

  • Buttermilk pancakes: replace milk with buttermilk
  • Blueberry pancakes: add berries after pouring batter
  • Banana pancakes: mash 1 ripe banana into batter
  • Protein pancakes: add 1 scoop protein powder + splash more milk
