Ingredients (Serves 4)
- 2 medium cucumbers, sliced or diced
- 3–4 medium tomatoes, chopped (cherry tomatoes halved works too)
- ¼ red onion, thinly sliced (optional)
- 2 tbsp olive oil
- 1–2 tbsp red wine vinegar or lemon juice
- Salt & pepper, to taste
- Optional: fresh herbs (basil, parsley, or dill)
- Optional: ¼ cup feta cheese or mozzarella pearls
Instructions
- Prep vegetables
- Slice cucumbers and chop tomatoes.
- Slice red onion if using.
- Mix dressing
- In a small bowl, whisk olive oil, vinegar (or lemon juice), salt, and pepper.
- Combine
- Toss cucumbers, tomatoes, and onion with dressing.
- Add fresh herbs and optional cheese.
- Chill & serve
- Chill in the fridge 15–30 minutes for flavors to meld.
