Cracker Barrel Meatloaf

Cracker Barrel Meatloaf (Copycat Recipe)

(serves 6)

Ingredients

Meatloaf

  • 1½ lbs ground beef (80/20 works best)
  • ½ cup milk
  • 2 eggs
  • 1 cup crushed Ritz crackers (about 30 crackers)
  • ½ cup onion, finely diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Glaze

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Lightly grease a loaf pan or baking dish.
  2. Mix meatloaf
    • In a large bowl, whisk milk and eggs.
    • Stir in crushed crackers, onion, salt, pepper, garlic powder, and onion powder.
    • Gently mix in ground beef until just combined (don’t overmix).
  3. Shape
    • Place meat mixture into the loaf pan or shape into a loaf on a lined baking sheet.
  4. Make glaze
    • Mix ketchup, brown sugar, and mustard.
    • Spread half of the glaze over the meatloaf.
  5. Bake
    • Bake uncovered for 45 minutes.
  6. Add more glaze
    • Remove from oven, spread remaining glaze on top.
    • Return to oven and bake another 15–20 minutes, until internal temp reaches 160°F.
  7. Rest & serve
    • Let rest 10 minutes before slicing.
