Lemon chia pudding

Ahh, classic and so good πŸ˜ŒπŸ‹
Here’s a simple, creamy lemon chia pudding you can throw together in minutes:

Lemon Chia Pudding

Ingredients

  • 3 tbsp chia seeds
  • 1 cup milk of choice (almond, oat, coconut = πŸ‘Œ)
  • Zest of 1 lemon
  • 1½–2 tbsp lemon juice (to taste)
  • 1–2 tbsp maple syrup or honey
  • Pinch of salt (trust me)

Instructions

  1. Whisk everything together in a bowl or jar really well (no chia clumps).
  2. Let it sit 5 minutes, whisk again.
  3. Cover and chill for at least 2 hours (overnight is best).
  4. Stir, adjust sweetness or lemon if needed.

Optional glow-ups

  • Swirl in Greek yogurt or coconut yogurt for extra creaminess
  • Top with blueberries, raspberries, or toasted coconut
  • Add vanilla for a lemon-cream vibe
  • Layer with granola like a parfait
