Here’s a crispy air-fryer KFC-style chicken that actually works (no sad, pale skin).


🍗 Air Fryer KFC-Style Chicken

Ingredients

Chicken

  • 6–8 pieces chicken (drumsticks, thighs, or wings)

Marinade

  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 egg

Seasoned Flour

  • 1½ cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • ½ tsp white pepper
  • 1 tsp salt
  • ½ tsp cayenne (optional)

Oil

  • Cooking spray or 2–3 tbsp oil

🔥 Method

1️⃣ Marinate

  • Whisk buttermilk and egg.
  • Add chicken, coat well.
  • Refrigerate 2–8 hours (overnight best).

2️⃣ Dredge

  • Mix flour + spices.
  • Coat chicken well, pressing flour on firmly.
  • Spritz lightly with oil on both sides (important!).

👉 For extra crunch: dip back into buttermilk and re-coat.


3️⃣ Air Fry

  • Preheat air fryer to 380°F (193°C).
  • Place chicken in a single layer (don’t crowd).
  • Cook 12 minutes, flip, spray lightly with oil.
  • Cook another 10–12 minutes until:
    • Deep golden
    • Internal temp 165°F (74°C)

4️⃣ Rest

  • Let rest 5 minutes before serving.

💡 Crispiness Secrets

  • Oil spray = fake “deep-fry” effect
  • Let flour sit on chicken before cooking
  • Don’t stack pieces
  • Dark meat works best

🔄 Extra Options

  • Extra crispy: Add 2 tbsp cornstarch to flour
  • Spicy: Add hot sauce to marinade
  • Boneless: Reduce cook time to 8–10 min per side
