Here’s a classic Cowboy Casserole—hearty, cheesy, and ridiculously satisfying.
Cowboy Casserole (serves 4–6)
Ingredients
- 450 g / 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz / 300 g) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 can corn, drained
- 1 tsp paprika
- ½ tsp chili powder (optional)
- Salt & black pepper
- 1 bag frozen tater tots
Optional Add-ins
- Green beans
- Jalapeños
- Cooked bacon bits
Instructions
- Brown the beef
Heat oven to 200°C / 400°F.
Brown beef with onion until cooked through. Drain excess fat.
Stir in garlic, paprika, chili powder, salt & pepper. - Mix the filling
Add soup, sour cream, corn, and half the cheese. Mix well. - Assemble
Spread mixture in a greased baking dish.
Sprinkle remaining cheese on top.
Arrange tater tots evenly over everything. - Bake
Bake uncovered 35–40 minutes until bubbly and tots are crispy. - Finish
Rest 5 minutes. Optional: sprinkle green onions or parsley.

- Extra crispy tots: Bake them separately for 10 min first, then add on top
- Tex-Mex twist: Add taco seasoning + pepper jack
- Chicken version: Swap beef for shredded chicken
