Loaded Cheesy Pocket Tacos

What they are:
Think taco + quesadilla + Hot Pocket all hanging out together.

Ingredients

  • Small flour tortillas (street-size or fajita-size)
  • Ground beef or chicken
  • Taco seasoning
  • Shredded cheese (cheddar, Mexican blend, or pepper jack)
  • Optional fillings (go wild):
    • Refried beans
    • Cooked rice
    • Corn
    • Jalapeños
    • Diced onions

For serving

  • Sour cream
  • Salsa or pico
  • Guacamole
  • Hot sauce

How to make them

  1. Cook the filling
    Brown meat, add taco seasoning, cook until saucy.
  2. Assemble the pockets
    Lay out tortillas. Add meat, cheese, and any extras.
    Fold tightly into a pocket (like a burrito, but flatter).
  3. Seal & crisp
    • Pan method: Cook seam-side down in a lightly oiled skillet until golden and crispy on both sides.
    • Air fryer: 375°F for 6–8 minutes, flipping once.
    • Oven: 400°F for ~12 minutes.
  4. Serve hot
    Cheese should be aggressively melty. Dip accordingly.
