🍅 Tomato Macaroni Soup

Ingredients

  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (or 2 cups fresh, chopped)
  • 4 cups vegetable or chicken broth
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • Salt & black pepper to taste
  • ¾ cup elbow macaroni (or other small pasta)
  • Optional: ¼ cup cream or milk for a creamier soup
  • Optional garnish: grated Parmesan, fresh basil, or parsley

Instructions

1️⃣ Sauté vegetables

  • Heat olive oil or butter in a large pot over medium heat.
  • Cook onion, carrot, and celery 5–6 minutes until softened.
  • Add garlic and cook 1 minute more.

2️⃣ Add tomatoes & seasonings

  • Stir in diced tomatoes, basil, oregano, salt, and pepper.
  • Simmer 5 minutes to let flavors meld.

3️⃣ Add broth & pasta

  • Pour in broth and bring to a boil.
  • Add macaroni and cook 8–10 minutes until tender.

4️⃣ Optional creaminess

  • Stir in cream or milk for a richer, smoother soup.
  • Adjust seasoning to taste.

5️⃣ Serve

  • Ladle into bowls and garnish with Parmesan or fresh herbs.
