Here’s a sweet and chewy Coconut Chewies recipe — soft, coconut-filled treats that are perfect for snacking or lunchboxes.


🥥 Coconut Chewies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups sweetened shredded coconut
  • Optional: 1 cup chocolate chips or chopped nuts

Instructions

1️⃣ Preheat oven

  • Preheat oven to 350°F (175°C).
  • Line baking sheets with parchment paper.

2️⃣ Mix wet ingredients

  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in vanilla.

3️⃣ Add dry ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add to the wet mixture, mixing until just combined.

4️⃣ Add coconut

  • Fold in shredded coconut (and chocolate chips or nuts if using).

5️⃣ Shape and bake

  • Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
  • Bake 10–12 minutes, until edges are lightly golden.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.

🔥 Tips & Variations

  • For extra chewiness, slightly underbake and let them finish on the baking sheet.
  • Toast coconut before mixing in for a nuttier flavor.
  • Add ½ tsp almond extract along with vanilla for a subtle flavor twist.
  • Press a chocolate kiss into the center for a special treat.
