Chicken fajitas

Here’s a quick and flavorful Chicken Fajitas recipe — tender, seasoned chicken with sautéed peppers and onions, perfect for tortillas or bowls.


🌯 Chicken Fajitas

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2–3 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt & pepper, to taste
  • 8 small flour or corn tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, lime wedges

Instructions

1️⃣ Marinate the chicken (optional but recommended)

  • Toss chicken strips with 1 tbsp olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  • Let sit 10–15 minutes to absorb flavors.

2️⃣ Cook the vegetables

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Sauté onions and bell peppers 5–7 minutes until tender-crisp. Remove and set aside.

3️⃣ Cook the chicken

  • In the same skillet, add remaining olive oil if needed.
  • Cook chicken strips 5–7 minutes until browned and cooked through (internal temp 165°F / 74°C).

4️⃣ Combine and serve

  • Return peppers and onions to the skillet and toss with chicken.
  • Serve immediately with warmed tortillas and desired toppings.

🔥 Tips & Variations

  • Add sliced mushrooms or zucchini for extra veggies.
  • For a smoky flavor, cook chicken and veggies on a grill or grill pan.
  • Serve over rice or lettuce for fajita bowls.
  • Squeeze fresh lime juice over the top for brightness.
