Mashed potato puffs

Here’s a delicious recipe for Mashed Potato Puffs—crispy on the outside, soft and creamy on the inside:


Ingredients (makes about 12 puffs)

  • 2 cups leftover mashed potatoes (or freshly made, cooled)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup green onions or chives, chopped (optional)
  • 1 egg, beaten
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (for coating)
  • 2–3 tbsp oil or melted butter (for brushing)

Instructions

  1. Preheat oven:
    • 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the mixture:
    • In a bowl, combine mashed potatoes, cheese, green onions, egg, garlic powder, salt, and pepper.
    • Mix until smooth and well combined.
  3. Shape the puffs:
    • Scoop about 2 tablespoons of the mixture and shape into small balls or oval puffs.
    • Roll lightly in breadcrumbs to coat.
  4. Bake:
    • Place puffs on the prepared baking sheet.
    • Brush or drizzle lightly with oil or melted butter.
    • Bake 20–25 minutes, flipping halfway, until golden brown and crispy.
  5. Serve:
    • Serve hot as a side dish or snack.
    • Optional: dip in sour cream, ketchup, or your favorite sauce.

💡 Tips:

  • For extra crispiness, broil for 1–2 minutes at the end.
  • You can add cooked bacon bits or finely chopped cooked vegetables to the mixture for variety.
  • Leftover mashed potatoes work best—they hold together better than freshly hot ones.
