Tres leches cake

Here’s a classic, ultra-moist Tres Leches Cake — light sponge cake soaked in three milks and topped with fluffy whipped cream.


Ingredients (9×13-inch pan)

Cake:

  • 1 cup all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 5 large eggs (separated)
  • 1 cup sugar (divided: ¾ cup + ¼ cup)
  • ⅓ cup whole milk
  • 1 tsp vanilla extract

Milk Mixture (“Tres Leches”):

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup whole milk (or heavy cream for richer flavor)

Topping:

  • 1½ cups heavy whipping cream
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Optional: strawberries, cinnamon, or toasted coconut

Instructions

1️⃣ Make the cake

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Whisk flour, baking powder, and salt together.
  • Separate eggs. Beat egg yolks with ¾ cup sugar until pale and thick. Stir in milk and vanilla.
  • Beat egg whites until soft peaks form, then gradually add remaining ¼ cup sugar and beat to stiff peaks.
  • Gently fold egg whites into yolk mixture.
  • Fold in dry ingredients carefully (do not overmix).
  • Pour into pan and bake 25–30 minutes until golden and set.

Cool completely.


2️⃣ Soak the cake

Whisk together condensed milk, evaporated milk, and whole milk.

  • Poke holes all over the cooled cake with a fork.
  • Slowly pour milk mixture evenly over the cake.
  • Refrigerate at least 4 hours, preferably overnight.

3️⃣ Add whipped topping

Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
Spread over chilled cake.


4️⃣ Serve

Slice and serve cold. Garnish with fruit or a light sprinkle of cinnamon if desired.


💡 Tips for the Best Tres Leches

  • The sponge cake is meant to be light — don’t substitute a dense butter cake.
  • Pour the milk mixture slowly to allow it to absorb evenly.
  • It tastes even better the next day.
  • For a coconut version, replace whole milk with coconut milk.
