Ingredients (serves 4)

  • 2 cucumbers, sliced thin or chopped
  • 2 tomatoes, chopped (Roma or vine-ripened work best)
  • 1 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or apple cider vinegar)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
