Basic Muffins (makes 12)

Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup (240 ml) milk
  • ⅓ cup (80 ml) vegetable oil or melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional add-ins: 1 cup blueberries, chocolate chips, mashed banana, or nuts

Method

  1. Preheat oven to 180°C / 350°F. Line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, salt.
  3. In another bowl, mix wet ingredients: milk, oil, egg, vanilla.
  4. Combine wet + dry ingredients gently. Batter should be slightly lumpy—don’t overmix!
  5. Fold in optional add-ins.
  6. Spoon batter into muffin tin, filling about ¾ full.
  7. Bake 18–22 minutes until golden and a toothpick comes out clean.
  8. Cool slightly in the tin, then transfer to a wire rack.

Tips

  • Moist muffins: add ¼ cup yogurt or sour cream to the wet ingredients.
  • Extra crumbly top: sprinkle sugar on top before baking.
  • Flavor ideas: lemon zest, cinnamon, peanut butter chips, or shredded apple.
