Here’s a classic, cozy tomato soup—smooth, comforting, and perfect with grilled cheese 🍅🥣


Tomato Soup

Ingredients

  • 2 tbsp butter or olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes or whole tomatoes (with juices)
  • 2 cups chicken or vegetable broth
  • 1 tsp sugar (optional, balances acidity)
  • Salt & pepper to taste
  • Optional: ½ tsp dried basil or oregano
  • Optional creamy add-in: ½ cup milk or cream

Instructions

  1. Sauté aromatics
    Heat butter/oil in a pot over medium heat. Cook onion until soft (5 minutes). Add garlic and cook 30 seconds.
  2. Simmer
    Add tomatoes, broth, sugar, and seasonings. Bring to a gentle boil, then simmer 15–20 minutes.
  3. Blend
    Blend with an immersion blender (or carefully in a blender) until smooth.
  4. Finish
    Stir in cream or milk if using. Taste and adjust seasoning.

Tips & Variations

  • Creamy tomato soup: add cream at the end
  • Roasted flavor: roast tomatoes & garlic before simmering
  • Dairy-free: use olive oil and skip cream
  • Extra smooth: strain after blending
