Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients

  • 8–10 medium shrimp, peeled & deveined
  • Salt & pepper
  • ½ tsp garlic powder or minced garlic
  • 1 tbsp butter or olive oil

Garlic Bread

  • 4 slices bread (sourdough or Texas toast works great)
  • 3 tbsp softened butter
  • 1–2 cloves garlic, minced
  • Optional: parsley

Cheese

  • 1½–2 cups shredded cheese (mozzarella + cheddar is great)

Instructions

  1. Cook the shrimp
    Season shrimp with salt, pepper, and garlic.
    Heat butter/oil in a skillet over medium heat and cook shrimp 1–2 minutes per side until pink. Chop into bite-sized pieces.
  2. Make garlic butter
    Mix softened butter with garlic (and parsley if using).
  3. Assemble sandwiches
    Spread garlic butter on one side of each bread slice.
    Place bread butter-side down, add cheese, shrimp, more cheese, then top with another slice (butter-side up).
  4. Grill
    Cook in a skillet over medium-low heat 3–4 minutes per side until golden and cheese is fully melted.

Tips & Variations

  • Extra cheesy: add cream cheese or provolone
  • Spicy: sprinkle red pepper flakes or add Cajun seasoning to shrimp
  • Garlic lover: brush bread with extra garlic butter after grilling
  • Serve with: tomato soup or a simple salad
