Here’s a fun and tasty idea: Stuffed Mashed Potato Nests 🥔🧀—crispy on the outside, creamy and cheesy on the inside. Perfect as a side or snack!


Stuffed Mashed Potato Nests

Ingredients

  • 3 cups mashed potatoes (homemade or leftover works)
  • 1 cup shredded cheddar cheese (or mix of cheeses)
  • 1–2 green onions, chopped (optional)
  • 1–2 eggs (for binding)
  • ½ cup cooked bacon bits, ham, or sautéed veggies (optional stuffing)
  • Salt & pepper to taste
  • Butter or oil for greasing

Instructions

  1. Preheat oven
    Preheat to 375°F (190°C). Grease a muffin tin with butter or oil.
  2. Prepare potato mixture
    Mix mashed potatoes, ½ cup cheese, green onions, eggs, salt, and pepper until combined.
  3. Form nests
    • Spoon mashed potatoes into muffin cups.
    • Press the center down slightly to make a “nest.”
  4. Add stuffing
    Fill each nest with bacon, ham, or veggies, and sprinkle a little extra cheese on top.
  5. Bake
    Bake 20–25 minutes until golden and slightly crispy on top.
  6. Serve
    Let cool a few minutes, then carefully remove from the muffin tin.

Tips & Variations

  • Extra crispy: brush the tops lightly with melted butter before baking
  • Cheesy overload: mix mozzarella inside and cheddar on top
  • Vegetarian: fill with sautéed mushrooms, spinach, or roasted peppers
  • Make ahead: assemble and refrigerate, then bake when ready
