Here’s a delicious recipe for Cheesy Mashed Potato Puffs—crispy on the outside, cheesy and fluffy on the inside 🥔🧀


Cheesy Mashed Potato Puffs

Ingredients

  • 3 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1–2 green onions, chopped (optional)
  • 1–2 eggs (for binding)
  • ½ cup cooked bacon bits, ham, or sautéed veggies (optional)
  • Salt & pepper to taste
  • 2–3 tbsp butter or oil (for greasing)

Instructions

  1. Preheat oven
    Preheat to 400°F (200°C). Grease a muffin tin or line with parchment paper.
  2. Mix ingredients
    In a bowl, combine mashed potatoes, cheese, green onions, eggs, salt, and pepper. Stir in optional bacon or veggies.
  3. Form puffs
    Spoon mixture into muffin cups, packing lightly, or shape into small balls for bite-sized puffs.
  4. Bake
    Bake 20–25 minutes until golden brown and slightly crispy on top.
  5. Serve
    Let cool a few minutes, then carefully remove from the tin. Enjoy warm!

Tips & Variations

  • Extra crispy: brush tops with melted butter before baking
  • Cheesy overload: mix in extra cheese inside and on top
  • Veggie option: add finely chopped spinach, bell peppers, or mushrooms
  • Make ahead: assemble and refrigerate, then bake when ready
