Broccoli salad

Here’s a fresh, crunchy broccoli salad that’s quick and really popular 🥦

Ingredients (serves 3–4)

  • 3 cups broccoli florets (raw, bite-size)
  • ¼ cup red onion, finely chopped
  • ¼ cup raisins or dried cranberries
  • ¼ cup sunflower seeds or chopped nuts
  • ½ cup shredded cheddar cheese (optional)

Dressing

  • ½ cup mayonnaise or Greek yogurt
  • 1 tbsp apple cider vinegar or lemon juice
  • 1–2 tbsp honey or sugar (to taste)
  • Salt & pepper

Instructions

  1. Prep broccoli
    Wash and cut broccoli into small florets. Peel and slice the stems thinly if using.
  2. Mix salad
    In a large bowl, combine broccoli, onion, dried fruit, seeds, and cheese.
  3. Make dressing
    Whisk together mayo (or yogurt), vinegar, honey/sugar, salt, and pepper.
  4. Combine
    Pour dressing over the salad and toss well.
  5. Chill
    Refrigerate for at least 30 minutes before serving for best flavor.

Variations

  • Healthy: Use Greek yogurt and add grated carrot
  • Crunchy: Add chopped apple or bell pepper
  • Protein: Add grilled chicken or chickpeas
  • Vegan: Use vegan mayo or olive oil + lemon
