Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon (optional)
- ½ cup (115 g) butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 can (8 oz) crushed pineapple, drained
- ½ cup chopped nuts (optional, walnuts or pecans)
Instructions
1. Preheat Oven
- Preheat oven to 175°C (350°F).
- Grease and flour a 9×5-inch loaf pan.
2. Mix Dry Ingredients
- In a bowl, whisk together flour, baking soda, salt, and cinnamon.
3. Mix Wet Ingredients
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, then stir in vanilla and pineapple.
4. Combine
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Fold in nuts if using.
5. Bake
- Pour batter into prepared pan.
- Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool 10 minutes in the pan, then transfer to a wire rack.
Tips
- For extra moisture, do not over-drain the pineapple.
- Optional: top with a light powdered sugar glaze or cream cheese frosting.
