Ingredients (Example: Chicken & Vegetables Foil Packets)

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (carrots, zucchini, bell peppers, broccoli, etc.)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder or minced garlic
  • 1 tsp dried herbs (thyme, rosemary, oregano, or Italian seasoning)
  • Optional: lemon slices or soy sauce for extra flavor

Instructions

1. Preheat Oven or Grill

  • Oven: 400°F (200°C)
  • Grill: Medium-high heat

2. Prepare Foil Packets

  1. Tear large sheets of aluminum foil (about 12–15 inches each).
  2. Place a chicken breast (or fish/other protein) in the center of each sheet.
  3. Add vegetables around the protein.
  4. Drizzle with olive oil and sprinkle with salt, pepper, garlic, and herbs.
  5. Add optional lemon slices or a splash of soy sauce.

3. Seal the Packets

  • Fold foil over the ingredients and crimp edges to make a sealed packet.

4. Cook

  • Oven: Place packets on a baking sheet and bake 25–30 minutes (chicken) or until cooked through.
  • Grill: Place packets on the grill and cook 15–20 minutes, turning once, until done.

5. Serve

  • Carefully open packets (steam will be hot!).
  • Serve protein and vegetables directly from the foil or transfer to a plate.

Tips

  • Variations: Swap chicken for salmon, shrimp, or steak; vegetables can be any favorites.
  • Cheese: Add shredded cheese in the last 5 minutes of baking for a melty topping.
  • Meal Prep: Make multiple packets ahead of time and refrigerate; cook from cold with a few extra minutes.
