Apple & Blueberry Cheesecake Bars

Ingredients

Crust

  • 1½ cups graham cracker crumbs (or digestive biscuits)
  • ¼ cup sugar
  • ½ cup melted butter

Cheesecake Filling

  • 2 packages (8 oz / 225 g each) cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Fruit Layer

  • 1 cup apples, peeled and finely diced
  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • ½ tsp cinnamon

Instructions

  1. Preheat oven to 175°C / 350°F. Line an 8×8-inch pan with parchment.
  2. Make crust: Mix crumbs, sugar, and butter. Press firmly into pan. Bake 10 minutes.
  3. Fruit layer: Toss apples, blueberries, sugar, lemon juice, cornstarch, and cinnamon together.
  4. Cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
  5. Spread cheesecake filling over warm crust.
  6. Spoon fruit mixture evenly over the top (lightly swirl if you like).
  7. Bake 40–45 minutes, until center is just set.
  8. Cool completely, then refrigerate at least 2 hours before cutting into bars.

Tips & Variations

  • Use Granny Smith apples for best flavor.
  • Add a streusel topping for crunch (butter, flour, brown sugar).
  • Serve chilled or slightly warm with whipped cream.
