Pineapple Coconut Snowballs

Ingredients

  • 1 cup crushed pineapple, well drained
  • 2 cups sweetened shredded coconut (plus extra for rolling)
  • ½ cup powdered sugar
  • ¼ cup cream cheese, softened (or sweetened condensed milk for a firmer bite)
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Drain the pineapple thoroughly — press it in a sieve or paper towel (this is key).
  2. In a bowl, mix pineapple, coconut, powdered sugar, cream cheese, vanilla, and salt until combined.
  3. Chill the mixture for 20–30 minutes to make rolling easier.
  4. Roll into 1-inch balls.
  5. Roll each ball in extra shredded coconut.
  6. Chill at least 1 hour before serving.

Optional Variations

  • Add white chocolate chips or drizzle melted white chocolate on top
  • Mix in macadamia nuts for crunch
  • Add a splash of lime juice or zest for brightness
