Antipasto salad

Posted on March 15, 2026 by Admin

🥗 Antipasto salad

Antipasto salad is a vibrant Italian-inspired salad featuring a mix of cured meats, cheeses, olives, and marinated vegetables. It’s typically served as a starter or light meal and can be customized with your favorite antipasto ingredients.

🧾 Ingredients

  • 1 cup Cured meats (salami, pepperoni, or prosciutto), sliced
  • 1 cup Cheese cubes (mozzarella, provolone, or cheddar)
  • ½ cup Marinated vegetables (artichoke hearts, roasted red peppers, mushrooms)
  • ½ cup Olives (green or black, pitted)
  • 1–2 cups Mixed salad greens (optional for a lighter salad)
  • 2 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

👨‍🍳 Instructions

  1. Combine ingredients
    • In a large salad bowl, combine cured meats, cheese, olives, and marinated vegetables. Add salad greens if using.
  2. Make dressing
    • Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  3. Toss and serve
    • Pour dressing over the salad and toss gently to coat. Serve immediately.

🌟 Tips

  • Customize your salad: Add cherry tomatoes, pepperoncini, or sliced red onions for extra flavor.
  • Make ahead: Marinated vegetables and cured meats can be prepped a day ahead to let flavors meld.
  • Serving size: Great for a party platter or as a side dish for an Italian meal.

🍽️ Serving Ideas

  • Serve with Crusty bread or Garlic bread.
  • Pair with Pasta or Soup for a complete meal.
  • Can also be skewered as antipasto kabobs for entertaining.

✅ Fun fact: Antipasto means “before the meal” in Italian, and this salad reflects the traditional Italian practice of serving a variety of flavors—salty, tangy, and savory—at the start of a meal.

I can also provide:

  • A hearty antipasto salad with roasted vegetables and fresh mozzarella
  • Quick antipasto skewers for parties
  • Low-carb version with extra greens and fewer cured meats
