Ingredients

  • 1 lb (450 g) dried butter beans (or 3–4 cups fresh/frozen)
  • 6 cups water or low-sodium chicken broth
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 2–3 slices bacon or 1 smoked ham hock (optional, for authentic Southern flavor)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper flakes (optional, for a little kick)
  • 2 tbsp butter
  • Fresh parsley or green onions, chopped for garnish

Instructions

  1. Prep the beans:
    • If using dried beans, rinse and soak overnight, or do a quick soak by boiling 2–3 minutes, then letting sit 1 hour. Drain before cooking.
  2. Cook the beans:
    • In a large pot, add the soaked beans and water (or broth). Add the bacon or ham hock if using. Bring to a boil, then reduce to a simmer.
  3. Add aromatics:
    • Add onion, garlic, salt, pepper, and optional red pepper flakes. Simmer gently for 1–1.5 hours (or until beans are tender). Stir occasionally and add more water if needed.
  4. Finish with butter:
    • Remove the ham hock (if used) and chop meat to stir back in. Stir in butter for creaminess. Adjust seasoning.
  5. Serve:
    • Garnish with chopped parsley or green onions. Serve hot alongside cornbread, fried chicken, or your favorite Southern dishes.
