Italian Drunken Noodles (No Alcohol)
Ingredients
- 8 oz egg noodles or pappardelle pasta
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 small onion (sliced)
- 1 bell pepper (sliced)
- 1 cup cherry tomatoes (halved) or canned diced tomatoes
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional, mild heat)
- ½ cup vegetable or chicken broth
- (Optional flavor boost: add 1 tbsp grape juice or balsamic vinegar)
- Salt & pepper to taste
- Fresh basil or parsley (optional)
- Parmesan cheese (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper; cook 3–4 minutes until soft.
- Add garlic and cook 30 seconds.
- Add tomatoes, Italian seasoning, salt, pepper, and red pepper flakes.
- Pour in broth (and optional grape juice or balsamic). Simmer 5–7 minutes.
- Toss in cooked noodles and mix well.
- Taste and adjust seasoning.
- Top with herbs and Parmesan if you like.

- Cooked chicken or sausage (ask an adult to help)
- Mushrooms or zucchini
- Spinach stirred in at the end
