Cajun Corn on the Cob

Ingredients

  • 4–6 ears fresh corn, husked
  • 4 tbsp unsalted butter, melted
  • 1 tbsp olive oil (optional)
  • 1–1½ tbsp Cajun seasoning (store-bought or homemade)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional, to taste)
  • Salt (only if your Cajun seasoning is salt-free)
  • 1–2 tbsp fresh lemon or lime juice
  • Chopped parsley or cilantro (optional)

Instructions

Grill Method (Best Flavor)

  1. Preheat grill to medium-high.
  2. Grill corn directly on grates, turning every 2–3 minutes, until lightly charred (10–12 minutes).
  3. Mix butter, olive oil, Cajun seasoning, paprika, garlic powder, cayenne, and citrus juice.
  4. Brush generously over hot corn.
  5. Garnish and serve immediately.

Boiled Method (Quick & Easy)

  1. Boil corn in salted water for 4–5 minutes.
  2. Drain and brush with Cajun butter mixture.

Oven-Roasted Method

  1. Preheat oven to 425°F (220°C).
  2. Wrap corn in foil with Cajun butter.
  3. Roast 20–25 minutes, turning once.

Cajun Butter (Optional Upgrade)

  • Add 1 tbsp honey (sweet heat)
  • Or 2 tbsp grated Parmesan
  • Or a splash of hot sauce

Tips

  • Extra smoky: Finish with a quick broil or grill after buttering.
  • Creamy street-style: Brush with mayo instead of butter, then sprinkle Cajun seasoning and Cotija.
