Ingredients (serves 2–4):

  • 4 large russet potatoes
  • 12 oz sausage (smoked sausage, kielbasa, or Italian—sliced)
  • 1 large onion, sliced
  • 2 tablespoons olive oil or butter
  • Salt & black pepper, to taste
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder (or 2 cloves fresh garlic)
  • Optional toppings:
    • Sour cream
    • Shredded cheese (cheddar or mozzarella)
    • Chives or green onions
    • Dijon or whole-grain mustard

Instructions

  1. Bake the potatoes
    • Preheat oven to 425°F (220°C).
    • Scrub potatoes, dry, poke with a fork, rub with oil and salt.
    • Bake directly on the rack for 50–60 minutes, until fluffy inside.
  2. Cook sausage & onions
    • Heat oil or butter in a skillet over medium heat.
    • Add sausage slices and brown well on both sides.
    • Add onions, paprika, garlic, salt, and pepper.
    • Cook until onions are soft and caramelized, about 8–10 minutes.
  3. Assemble
    • Split open baked potatoes, fluff with a fork.
    • Top generously with sausage and onions.
    • Add cheese, sour cream, or mustard if desired.
