Here’s an easy, tasty recipe for Baked Potatoes with Herbs & White Onion 🥔🌿🧅

Ingredients (serves 2–4)

  • 4 medium potatoes (russet or Yukon gold)
  • 1 small white onion, thinly sliced or finely chopped
  • 2–3 tbsp olive oil
  • 1–2 tsp dried herbs (rosemary, thyme, oregano, or Italian seasoning)
  • Salt & black pepper, to taste
  • Optional: garlic powder or fresh minced garlic

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prep potatoes: Wash and dry the potatoes. You can leave them whole or cut into wedges or cubes for crispier edges.
  3. Season: In a bowl, toss potatoes with olive oil, onion, herbs, salt, pepper, and optional garlic.
  4. Bake: Spread everything evenly on a baking tray (lined or lightly greased).
    • Whole potatoes: bake 50–60 minutes, turning once
    • Cut potatoes: bake 35–45 minutes, flipping halfway
  5. Finish: Bake until golden and crispy outside and soft inside.

Serving Ideas

  • Top with sour cream or Greek yogurt
  • Sprinkle with fresh parsley or chives
  • Add a little butter or grated cheese while hot
