Ingredients

For the banana filling

  • 4–5 ripe bananas, sliced
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 1 tsp cinnamon

  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the cobbler topping

  • 1 cup all-purpose flour
  • ¾ cup sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ½ cup (1 stick) melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the filling:
    In a bowl, gently mix bananas, brown sugar, white sugar, cinnamon, nutmeg, lemon juice, and vanilla.
  3. Prepare the dish:
    Pour melted butter into an 8×8-inch baking dish.
  4. Make the topping:
    Whisk flour, sugar, baking powder, and salt. Stir in milk until just combined.
  5. Assemble:
    Pour batter over the butter (don’t stir). Spoon banana mixture evenly over the batter (also don’t stir).
  6. Bake for 40–45 minutes, until golden brown and bubbling.
  7. Cool slightly before serving.

Serving ideas

  • Serve warm with vanilla ice cream or whipped cream
  • Drizzle with caramel sauce
  • Sprinkle chopped pecans or walnuts on top before baking
