Beef noodle soup

A classic, cozy choice 🍜 Here’s a simple, comforting beef noodle soup you can make at home without anything fancy.

Beef Noodle Soup (serves 4)

Ingredients

  • 500 g (1 lb) beef (chuck, brisket, or shank), sliced or cubed
  • 2 tbsp oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger (fresh or ground)
  • 6–8 cups beef stock or water
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • Salt & pepper to taste
  • 200–250 g noodles (egg noodles, rice noodles, or wheat)
  • Spring onions or cilantro, to serve

Method

  1. Brown the beef in oil in a pot until well-colored. Remove and set aside.
  2. Sauté onion, garlic, and ginger in the same pot until fragrant.
  3. Return beef to the pot. Add stock, soy sauce, and oyster sauce.
  4. Simmer gently 45–90 minutes (depending on cut) until beef is tender.
  5. Cook noodles separately according to package directions.
  6. Assemble bowls: noodles first, ladle over beef and broth.
  7. Garnish and serve hot.

Easy upgrades

  • Add star anise, cinnamon stick, or cloves for a deeper, aromatic broth
  • Toss in bok choy, spinach, or carrots
  • Finish with a drizzle of sesame oil or chili oil 🌶️
