Beetroot (also called beet) is a sweet, earthy root vegetable with lots of uses ❤️

  • The edible root of Beta vulgaris
  • Can be eaten raw, cooked, roasted, pickled, or juiced
  • Deep red color (but also golden or striped varieties)

  1. Preheat oven to 200°C / 400°F
  2. Peel & cube beetroot

  4. Roast 30–40 min until tender
  5. Finish with feta or balsamic glaze
