Birria Chicken Wings Recipe

  • 1/4 teaspoon ground cloves (optional)
  • 1 cup beef or chicken broth
  • 2 tablespoons apple cider vinegar
  • Salt, to taste

For serving:

  • Chopped cilantro
  • Diced onions
  • Lime wedges
  • Warm tortillas (optional)

Instructions

  1. Prepare the chiles:
    • Toast guajillo and ancho chiles lightly in a dry skillet for 30–60 seconds until fragrant.
    • Soak in hot water for 10–15 minutes until softened.
  2. Make the birria sauce:
    • Blend soaked chiles, garlic, onion, oregano, cumin, smoked paprika, cloves, broth, and vinegar until smooth.
    • Season with salt to taste.
  3. Marinate wings:
    • Toss chicken wings in birria sauce, coating completely.
    • Cover and refrigerate 2–4 hours, or overnight for deeper flavor.
  4. Cook the wings:
    Oven method:

    • Preheat oven to 400°F (200°C).
    • Place wings on a baking sheet lined with foil.
    • Roast 35–40 minutes, flipping halfway, until crispy and cooked through.

    Air fryer method:

    • Preheat air fryer to 400°F (200°C).
    • Air fry wings 20–25 minutes, shaking halfway, until crispy.
  5. Optional final step:
    • After cooking, you can simmer the wings briefly in the remaining birria sauce to make them extra saucy.
  6. Serve:
    • Garnish with chopped cilantro, diced onions, and lime wedges.
    • Serve with tortillas to make tacos or enjoy as wings with dipping sauce.

Tips for Maximum Flavor:

  • Extra crispy: Pat wings dry before roasting or air frying, then brush lightly with oil.
  • Make it saucy: Reserve some marinade before adding raw wings to toss them after cooking.
