Blueberry Cream Cheese Bread

Ingredients

Bread

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries (toss frozen in a little flour to prevent sinking)

Cream Cheese Swirl

  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Make cream cheese filling
    • Mix cream cheese, sugar, and vanilla until smooth. Set aside.
  3. Prepare bread batter
    • In a bowl, whisk flour, baking powder, baking soda, and salt.
    • In another bowl, beat eggs, sugar, oil, and vanilla.
    • Combine wet and dry ingredients, then gently fold in blueberries.
  4. Assemble
    • Pour half of the batter into the loaf pan.
    • Spoon the cream cheese mixture over the batter.
    • Top with remaining batter. Swirl gently with a knife.
  5. Bake
    • Bake 50–60 minutes, until a toothpick inserted in the center comes out clean (except for cream cheese swirl).
  6. Cool & serve
    • Let cool 10–15 minutes in pan, then transfer to a wire rack. Slice and enjoy!

  • Frosting (optional): Drizzle with powdered sugar glaze or cream cheese frosting.
  • Other fruits: Raspberries, strawberries, or chopped peaches work well.
  • Extra flavor: Add lemon zest for a bright touch.
  • Frozen blueberries: Do not thaw—toss in flour before folding into batter to prevent bleeding.
