Broccoli Chicken Cheese Casserole (serves 4–6)

Ingredients

  • 2–3 cups cooked chicken breast, diced or shredded
  • 3 cups broccoli florets (fresh or frozen)
  • 1 can (10.5 oz / 300 g) cream of mushroom or cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • 1½–2 cups shredded cheddar cheese (or cheddar–mozzarella mix)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper
  • Optional: ¼ tsp paprika

Topping (optional but 🔥)

  • ½ cup crushed crackers or breadcrumbs
  • 2 tbsp melted butter

Instructions

  1. Prep
    • Heat oven to 190°C / 375°F.
    • Steam broccoli 3–4 minutes until just tender (don’t overcook).
  2. Mix
    • In a large bowl, combine soup, sour cream, 1 cup cheese, garlic powder, onion powder, paprika, salt & pepper.
    • Fold in chicken and broccoli.
  3. Assemble
    • Spread mixture into a greased casserole dish.
    • Top with remaining cheese.
    • Add buttery cracker topping if using.
  4. Bake
    • Bake uncovered for 30–35 minutes, until bubbly and golden.
    • Rest 5 minutes before serving.

Easy Variations

  • Rice casserole: Stir in 2 cups cooked rice
  • Low-carb: Skip crackers, add extra broccoli
  • Extra creamy: Add ¼ cup milk or cream
  • Spicy: Add chili flakes or hot sauce
