Burrito casserole

Here’s a hearty, family-friendly Burrito Casserole—all the flavors of a burrito baked into one easy dish:


Ingredients (6 servings)

  • 1 lb (450g) ground beef or ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 2 cups shredded Mexican blend cheese (divided)
  • 4–6 flour tortillas (medium size)
  • 1 cup enchilada sauce or salsa

Optional toppings:
Sour cream, chopped cilantro, sliced jalapeños, diced avocado, green onions


Instructions

  1. Preheat oven:
    • 375°F (190°C).
    • Lightly grease a 9×13-inch baking dish.
  2. Cook the meat:
    • In a skillet over medium heat, cook ground beef and onion until browned.
    • Add garlic and cook 30 seconds more.
    • Stir in taco seasoning and water; simmer 2–3 minutes.
  3. Add mix-ins:
    • Stir in black beans, corn, and diced tomatoes.
    • Cook 2–3 minutes until heated through.
  4. Layer the casserole:
    • Spread a thin layer of enchilada sauce in the bottom of the baking dish.
    • Place tortillas to cover the bottom (cut to fit if needed).
    • Spread half the meat mixture over tortillas.
    • Sprinkle with 1 cup cheese.
    • Repeat layers, ending with cheese on top.
  5. Bake:
    • Cover with foil and bake 20 minutes.
    • Remove foil and bake 10–15 minutes more until cheese is melted and bubbly.
  6. Rest & serve:
    • Let sit 5–10 minutes before slicing.
    • Add your favorite toppings and serve.

💡 Tips:

  • Swap ground beef for shredded chicken or make it vegetarian by doubling the beans.
  • Add cooked rice between layers for an extra-filling version.
  • Spice it up with hot sauce or pepper jack cheese.
