Cabbage Roll Soup

Here’s a comforting and hearty Cabbage Roll Soup recipe—it’s basically all the flavors of traditional stuffed cabbage rolls, but in a soup form:


Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef or vegetable broth
  • 1 cup cooked rice (optional, can add later for thicker soup)
  • 1 tsp paprika
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp dried parsley (optional)
  • 1 tsp dried thyme (optional)

Instructions:

  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion and garlic; sauté until soft and fragrant.
  3. Stir in chopped cabbage, diced tomatoes, tomato sauce, and broth.
  4. Season with paprika, salt, pepper, parsley, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 30–40 minutes, until the cabbage is tender.
  6. Optional: Stir in cooked rice just before serving for a heartier soup.
  7. Serve hot with bread or rolls.
